Twice Baked?

Hello everyone,

Saturday night and I am home on my couch 🙂 Sometimes nights like this are needed.

I spent the day hanging with my godson- it was pure love ❤

This week was so weird with all our snow days and delayed openings. I did a lot of at home workouts which was great. I used some different exercises from the Tone It Up Girls to create a great at home cardio workout:

  • 20 jumping jacks
  • arm punches with high kicks (20 each side)
  • Plank booty side to side drops (10 each side) 
  • 20 burpees
  • 20 ski jumps

*Do this set 3 times.

What a workout! I definitely broke a sweat the few times I did it this week! Afterwards I did my plank routine and my PT stretches AND foam rolling.

Before the gym this morning I pre-fueled with a coconut Luna bar- so good! They have 9g of protein, I definitely will get this one again!

This morning I spent some time at the gym, 15 minutes elliptical, my arm workout from the other day, 15 minutes cross elliptical, PT exercises, 15 minutes bike, plank routine, and PT stretches. I have been trying to make the gym as fun as possible, doing a “longer workout” on Saturdays to “mimic” a “long run.” Can’t wait to be back to running 😦

After the gym I made a delicious egg scramble with my TJs middle eastern flat bread:

Eggs, kale, chickpeas, tomatoes, goat cheese, and some turkey!

After that I baked healthier chocolate chip walnut cookies from Chocolate Covered Katie to bring to my friend’s house:

They were good- not totally moist, probably needed an egg or something? Maybe one day I will adventure playing with baking recipes but for now I need to follow them. I’m good with playing around with savory meals but when it comes to baking, I don’t want to mess anything up!

After playing with the baby for hours, I came home and had dinner and then BAKED AGAIN! haha who am I?

I had a banana that was so brown so I decided to make some banana oatmeal muffins from Sarah Fit’s blog, but used raisins instead of dates. I think these will be great to snack on or have for part of breakfast this week! This baking basket has changed my life haha

I am enjoying one now with some almond butter on it and a cup of tea 🙂 crazy Saturday night here. (Oh and enjoying the Devil Wears Prada)

I think tomorrow I may go to yoga- I’m feeling a little sore and tight from my gym session today, so I think it will feel good to stretch it all out!
