Meal Prep Saturday

Whoa two posts in a row! Haha I am hanging out and relaxing before tomorrow so why not a little update.

Since my fam and I will be going to brunch after the half tomorrow I figured I would do my TJs haul, meal prep and laundry today.

Before I got to my errands I headed to the uptown Ritz Carlton haha for leg work, core work, stretching and foam rolling. It is about a 20-25 minute walk there so that was fun too, to enjoy this gorgeous weather today!! 

Then headed home for some carbo-loading:


A big bowl of oats with almond butter and raisins with an egg and butternut squash on the side! 


Meal prep for the week: roasted brussel sprouts, eggs, sweet potatoes, butternut squash and this really awesome meal for the week.

Here is a close-up:


Onion, ground turkey, one zucchini, two pears, one parsnip (this was my first time cooking with parsnip, I actually grated it then heated it up in the microwave for 3 minutes before cutting it up), red quinoa, 5 laughing cow swiss cheeses, a dash of nutmeg and a dash of cinnamon. I just make up these random things in my head and try them out. Usually I search around on some blogs and see what people have been cooking then take my spin on it. I haven’t had the same meal in weeks because I just keep thinking of new recipes to try! It is SO fun!

I made sure to hydrate a lot today and even with some coconut water that my parents bought for me:


This was the best coconut water I have ever had. They got it at Corrados’s a nice inexpensive market in NJ. I felt like there was nothing added so there was no weird after taste. I had two glasses of it plus plenty of water today!
