Embracing Pumpkin Season

Happy Thursday, Happy New Year (to those who celebrate), Happy Day off from School for me, and Happy Pumpkin Season!

Although I am a true Summer baby (hello July birthday) there is something about Fall that makes me super nostalgic. I love picking pumpkins, eating candy apples, munch on cider donuts while gulping cider, and taking in the Fall “smells” in the air. It’s a beautiful season and there are some awesome flavors to enjoy during this season!

Over the weekend I picked up a can of Trader Joe’s Organic Pumpkin to experiment with in the kitchen. Last Fall I mistakenly bought a can, put it in a cup and dived into it with a spoon for a yummy dessert. FAIL. I had no idea that canned pumpkin does not taste like pumpkin pie. haha, oh the cooking things I have learned!

So anyway here are two recipes that I experimented with and wanted to share!

Pumpkin Overnight Oats:

Half a cup of TJs rolled oats:


A tablespoon of chia seeds:


Mix together.

Then add about a tablespoon (I eyeballed) of TJs Pumpkin Butter (my old roomie left this in the fridge completely unused when she moved out and it doesn’t expire yet so holla it’s mine!)


Then a tablespoon (eyeballed again) of Peanut Butter & Co. Cinnamon Raisin Peanut Butter:


Then about 3-4 tablespoons (eyeballed) of TJs Organic Pumpkin:


Then about 2 tablespoons (eyeballed haha) of Almond Milk (normally I use regular milk but my friend gave this to me because she didn’t want it):


Then a container of Fage Greek Yogurt:


A few dashes of Cinnamon:


Mix it all up together in a container and leave it in the fridge overnight.

And enjoy the next morning!!


Pumpkin Egg Oatmeal: (inspired by Miles On Oats– thanks girl!)

Bring 1 cup of water and a few dashes of salt to a boil then reduce heat and add 1/2 cup of Trader Joe’s Rolled Oats:


Let it cook for about 10 minutes or so (until the oats are cooked).

Then turn up the heat and add in 1 tablespoon of TJ’s pumpkin butter, about 1/2 cup (maybe less) of TJ’s organic pumpkin, 1 tablespoon of chia seeds, a few dashes of cinnamon, then stir in two eggs (crack and stir in a small bowl before), keep stirring until eggs are cooked through in the oatmeal.

Then OH MY GOD ENJOY!!!!!! I had this after my rainy 8 mile run this morning. This is a new staple in my life. I loveeeee having the eggs in the oatmeal to give me more protein and it was just creamy and good and amazing. DO IT NOW!!
