Since I am cutting back on orange foods this week I decided to change it up and make egg muffins for breakfast! Super easy: scramble an egg, milk, and add in some sauteed onions/spinach, then put in a greased muffin tin and bake for about 20-25 minutes at 350. Healthy, delicious and easy to prep ahead!

Salads Prepped this week: cucumber, tomato, Cuban beans, white potatoes, grilled chicken and spinach (no carrots this week)!
I decided to try out some Ezekial Bread (it’s okkkk, not a huge fan, but I have it now in the freezer and I paid for it so I will eat it). Made an almond butter & jelly sandwich, Greek yogurt with pumpkin butter/cinnamon and a banana on the side.
At my parent’s house we made a random everything but the kitchen sink fritatta! Onion, random leftover potato/veggie mix, broccoli, parmesan cheese, and gorgonzola cheese.
Loaded Baked Potato with Tuna, Onions, Spinach and Kale/Raisin/Cinnamon on the side.
Meal prepped this week: Healthier Eggplant Parm: Brown Rice Pasta, Baked Eggplant, Ground Turkey cooked with two cans of diced tomatoes, and mozzarella cheese.
Sunday night home cooked dinner at my parent’s house: meatloaf, mashed potatoes, broccoli with some parmesan cheese on top.
Drinks (because when it’s cold this gets a category 🙂 )

I went to Starbucks with my BFF to catch up and I got this AMAZING tea that I had to buy it! Pineapple Kona Pop- SOOOO good!

Oh and one more fun thing:
Shop Rite had the Can Can Sale and I took full advantage: canned beets, tuna, many types of beans, broth, and peanut butter! Such a good deal for it all!!
