WIAW: A Pretty Looking Omelette!

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Breakfasts:

Post Long Run: My sister always leave me her empty Cookie Butter jars- overnight oats: Fage Greek Yogurt, Rolled Oats, Cinnamon, Chia Seeds, Milk, and some honey with a banana and almond butter on the side.

Banana, peanut butter, cocoa, greek yogurt smoothie with some chocolate granola sprinkled on top.

My delicious Spinach and Onion Egg Muffins, Banana, and Ezekial Bread wth PB&J!

Lunches:

Broccoli/Cottage Cheese Omelette, Sweet Potato (only one this week) with PB and a side of kale!

Look how awesome this Cottage Cheese/ Tomato omelette was! (two pics of it!) I had cooked some kale first then cooked the omelette so the pan was really hot, I think that is why my omelette came out so great!

Salads prepped this week: cucumber, avocado, tomato, pinto beans, beets, red potatoes, chicken, and spinach.

Dinners:

Dinner and meal prep this week: Healthy fried rice made with TJs Rice, Frozen Foursome, and an egg all cooked with coconut oil. Then chicken with snow peas and TJs Soyaki Sauce. Also prepped: Brussel Sprouts, Roasted Broccoli, and Egg Muffins.

Dinner at my parent’s house: Homemade Lemon Chicken Orzo Soup, Fresh Bread, and a side Salad.

Another dinner at my parent’s house: sauteed spinach & onion, ravioli with homemade sauce and meatballs. They feed me so well!

Desserts:

Fresh Orange, Kona Pop Tea, a Rice Cake with PB and chocolate chips.

My mom had a banana that needed to be used so I made easy and healthy cookies! One ripe banana, one cup of rolled oats, two egg whites, a bunch of chocolate chips, chopped walnuts all mixed together and baked for about 15 minutes at 350! Super easy, tasty and a healthy treat!

I have been enjoying many Arctic Zero creations but that will be a separate post soon!!
