Energy Balls Recipe!

I had some dates that were getting dried out and since I didn’t want to throw them out and waste money I decided to do some experimenting in the kitchen for a fun snack!

Ingredients:

1/4 cup of rolled oats

1/4 cup of coconut flakes (unsweetened)

1/2 tbsp of chia seeds

6 dates (pitted and chopped)

1 tbsp of almond butter

1 tbsp of honey

About 2 tbsps of dark chocolate chips

First in a blender or food processor mix the rolled oats and coconut flakes. Then add the chia seeds and blend.

Next add the chopped up/pitted dates, almond butter and honey. If it isn’t all mixing in the blender/food processor (which happened to me) just transfer to a bowl.

Then stir in chocolate chips.

I then put in the freezer for about an hour which was probably a mistake, should have done the fridge for a little then formed them, because they were hard to form but it all worked out.

Lastly form them into balls. I kept them in the freezer and then transferred to a plastic container in the fridge.

They aren’t as gorgeous as the energy balls I have seen on so many blogs. But I worked with the ingredients I had on hand and they are a yummy and different treat!
