Hello Readers! My blog is turning into a food website with some workout updates mixed in! Haha it’s all good, I enjoy eating, cooking, baking and working out, so why not share the things I enjoy. Hopefully over the summer when I have more time I can get to updating more. But for now it’s WIAW, Weekly Workouts and some random recipes and such thrown in!
Anyway, sorry for the tangent. So Friday night I was laying in bed and naturally thought about baking haha. I was like you know, St. Patrick’s Day is coming up, I’m going to try my hand at Irish Soda Bread! So I did some googling and found this recipe.
I wanted to use Whole Wheat Flour since I had it on hand and I didn’t want to have to buy a ton more ingredients at the store. I did have to buy buttermilk but other than that I used what I had on hand. I also ended up using half a cup of applesauce that I had instead of the butter because I didn’t have any in the house! Other than that I followed the recipe exactly. I used TJs plump black seedless raisins too.

Oh! Instead of forming them into two loaves, I decided to make them into muffins by spraying the muffin tin and then putting the dough in that way. I only had to bake them for about 20 minutes rather than the 35 minutes that the recipe suggests.
They are really good! Yummy if you toast them and put butter or jam or a nut butter on them too! A great breakfast or yummy snack! The only sugar in them comes from the raisins and tablespoon of honey so no added sugar is a plus! Enjoy!
