Sunday Meal Prep!

Happy Sunday Friends! Thanks to Jill Conyers and Mommy Run Fast for the Link-up this week!

For Breakfast a couple times this week: Spinach & Egg Muffins, such a great staple to my weekly breakfasts now!

For Lunches this week: White Beans, TJs Veggie 8 Mix, Tomatoes, Beets, Avocado, TJs Grilled Chicken and some left over spinach that I didn’t use for the egg muffins.

For Dinner this week, I wanted to use my the leftover Soyaki sauce that I had sitting in my fridge, so I decided to do a simple and easy Asian Stir Fry.

Trader Joes sells an easy and fresh Asian Stir Fry package and I love their chicken breasts, two pounds for only $6! It is super annoying to cut the chicken all up, but it’s a good deal.

First I cooked the cut up chicken with half of an onion (left over from my egg muffins) in this Orange Infused oil. A student last year gave me all these oils and I haven’t found a use for this one, but I realized that orange flavor would be awesome with Asian ingredients.

Then I added the Stir Fry veggies and let it simmer away.

Then I served it over TJ’s Basmati Wild Rice.

Yummy and healthy dinners for the week!

And just a few other things prepped: fresh cut up strawberries, potatoes to go with my salads, roasted carrots (I have not had roasted carrots in like two months due to my orange hands, which has now gone away, woot!!!) and roasted brussel sprouts.
