Since I had off on Friday, I took advantage of the time off and did my weekly grocery haul from Trader Joes and my weekly meal prep! I felt so relaxed and not so rushed as I often do on a Saturday.
For a couple of Breakfasts, Spinach and Egg Muffins.
For Lunches this week
Roman Beans, a large cucumber, tomatoes, TJs Veggie 8 Mix, Grilled Chicken, Avocado and some left over spinach (I was going to put in beets but that large cucumber took up too much room haha).
I also made some sweet potatoes as a side.
For Dinner I decided to have Mexican this week! Super easy and delicious meal. Ground Turkey, TJ’s Cowboy Caviar (salsa, black beans and corn mixed together, the other half of my onion from the egg muffins and a bag of their awesome mixed peppers for $1.99 (already cut and ready to use- one of the best deals at the store), served over rice and then when I heat it up I will throw some of this Greek Yogurt Guacamole on top!
Such a simple meal filled with good protein, carbs, fat and veggies!
For some side dishes:
Roasted Broccoli and Roasted Brussel Sprouts.
And for snacks and desserts, I washed and cut up 2 lbs. of strawberries!
