Meal Prep: Quick and the unexpected

This week I had to get my food shopping and meal prep done in a short amount of time. I had a few things going on Saturday morning and had plans that night which left me about 3 hours or so to food shop and prep for the week. I did meal prep and food shopping at my parent’s house because I had plans by them earlier that day.

The Trader Joes that I went to was SO disappointing. They were missing a lot of ingredients that I had wanted for my meals and their produce was pretty crappy. I didn’t expect my shopping experience to be like that but I had to roll with what I had and deal with it.

Breakfast:

The original plan was to sautee butternut squash in coconut oil but when I opened the package at home, it was all moldy!! I was so annoyed that I spent about $3 on it just to have to throw it out. I didn’t have time to go back and return it so I had to move to plan b.

I boiled some eggs.

I had also bought a small bag of avocados because there was ONE ripe avocado in it out of all the avocados in the store so I decided I would take one for my salads and give the rest to my family. But I ended up taking another avocado (hopefully it will ripen up) and I’ll just make avocado toast and put eggs on it this week for breakfast.

Lunch:

They didn’t have my Veggie 8 mix that I love oh so much!! So I had to change the game plan.

Salads this week are red beans, cucumber, shredded carrots, tomatoes, beets, avocado, TJs grilled chicken, and spinach. It is good to change it up but sometimes you want what you want! But we have to deal with the unexpected and adapt.

I also microwaved some sweet potatoes.

Dinner:

I had a chicken mango idea in my head but there was no mango and I realized I didn’t have a ton of time to cut up chicken. So plan b.

I bought ground turkey, frozen pineapple, this yummy and cheap ($1.99) dressing, and stir fry veggies. I cooked the ground turkey first, threw in the veggies, towards the end I added some frozen pineapple and the dressing and voila! Super easy, quick, healthy and delicious meal!

I served it over TJs brown rice medley.

I also roasted some veggies for sides.

I cut up two pounds of strawberries to munch on this week.
Also, unpictured, but I had to mention that their apple selection was so terrible. I had to get pink lady apples because that was the only thing that looked somewhat decent and was reasonable.

So that is my meal prep this week. I got the food shopping and prep done in about 2 and and a half hours!! Even though some things during my grocery experience were unexpected, I still managed to get it all done and was able to make my plans for that evening. You sometimes need to do what you can to squeeze in meal prep but once its done it feels great to know that you have healthy choices ready for the week ahead!!
