WIAW: Early Morning Sunday

Happy WIAW everyone!

On Sunday I volunteered at the NYRR Retro 4 miler in Central Park. Which meant I had to wake up at the crack of dawn to drive into NYC. It was a gorgeous day, especially for a race! After that I drove home to my parent’s house to enjoy the day at the pool and Sunday dinner with them!

Coffee, water, blog reading on my tablet, and Overnight Oats made with rolled oats, Fage Greek Yogurt, milk and a smashed banana in an empty peanut butter jar. Although it was super early, my stomach told me that I was ready to eat. I guess it’s that happy metabolism that I have! 🙂

Then I headed into the city for the race!

Towards the end they let us take apples left over from the race.

After the race I came home to my parent’s house and had some lunch as I was super hungry after a morning of volunteering!

Kale sauteed with raisins, carrots and cinnamon, tuna mixed with mustard, an English muffin and broccoli with parmesan cheese on the side. Yes, random, but delicious!

Pre-dinner Appetizer:

A random yet awesome Guacamole! We had totally ready to use avocado so I chopped/mashed it up, added cherry tomatoes, lemon juice, salt, pepper, lemon and garlic powder. We didn’t have nachos so we used crackers instead!

This was such a delicious grilled dinner! Grilled onion, peppers, zucchini, potato “fries” and sausage. So yummy!!

A S’more and Watermelon!

What was your favorite day of eats this week?

  1. What an awesome day! And that s’mores/watermelon combo sounds interestingly delicious! Favorite day of eats had to be Sunday – nothing beats some homemade pizza!
