Just some eggs for avocado toast!
Salads: Roman Beans, Cucumbers, TJs Veggie 8 Mix, Tomatoes, Avocado, Beets, and TJs grilled chicken.
Sweet Potatoes for my side
When I was brainstorming dinner I was thinking about Asian dishes that I have had with soy/peanut butter dressing. I also thought that more of a long pasta would go well along with snow peas and broccoli and chicken.
I first sauteed the cut up chicken with a diced onion. Once it was all cooked I added the snow peas and frozen broccoli.
Meanwhile I cooked this TJs Brown Rice and Quinoa Pasta (be careful, it sticks together very easy).
In a little bowl I stirred together probably 2 tablespoons of honey roasted peanut butter with my leftover Sesame Ginger Dressing that I had from TJs.
I then added it towards the end of my cooking and let it all simmer together.
I portioned it out with the pasta and that is my dinner for this week!
I also roasted some Brussels Sprouts and Carrots (I put cinnamon, salt and pepper on my carrots when I roast them).
Still on my 2 lb. strawberry kick.
That is my meal prep for this week! Super easy, delicious and food that makes me feel good!
