Happy Sunday everyone and Happy Labor Day weekend! I am back in action with meal prepping since I went back to work this past week. Meal prepping saves me SO much time and money. It was nice to be more laid back and spontaneous over the summer with my meals but having structure when I am super busy is just as important. The weekends I can be more spontaneous. 🙂 Thanks to Mommy Run Fast and Jill Conyers for their link-up!
Since I had my Long Run on Saturday (17 miles!) I took a rest day the night before. So I decided that was a great time to go food shopping and do my meal prep then I could have the rest of the weekend to enjoy, rest and relax!
I haven’t had hard boiled eggs and butternut squash in awhile so this is a yummy treat to have again for breakfast! I also have a banana with nut butter on the side with this!
I made Julie’s Peanut Butter Granola and doubled the recipe so it would last me longer. Homemade granola is so good and so easy to make! *Tip keep an eye on it so it doesn’t burn. I didn’t even have to bake it for 10 minutes, probably about 7 or 8.
I also found frozen peach slices at Trader Joe’s to use for smoothies this week!
Red Beans, Cucumber, Beets (they were out of figs this week 😦 ), Tomatoes, TJs Veggie 8 Mix. Almonds for a healthy fat (all the avocados were so hard and I really just wanted to make my salads and be done with them that night) and TJs grilled chicken.
Sweet Potatoes on the side.
Super easy recipe this week. Kind of like a Chipotle Bowl: Ground Turkey, Black Beans, Diced Tomatoes, Corn all cooked together served over rice and I bought guacamole and will use Greek Yogurt for sour cream!
I also roasted some veggies on the side.
