Recent Eats AND Meal Prep!

Happy Wednesday everyone! Today I am sharing some recent eats and my meal prep for the week since life has been so busy!

Meal Prep

Salads this week, same as usual except using beets this week instead of grapes!

Chicken Stir Fry over Quinoa, some veggies, sweet potatoes and eggs. Meal prep makes my life easy and healthy!

Speaking of healthy, my mom is trying to eat healthier, how awesome does her salad look?? Go mama!

The most random lunch: Greek yogurt and prunes, carrots, and a PB&J sandwich.

Post Long Run Fuel: Omelet, Sweet Potato and some kale with pomegranate seeds.

My parents had a date in the city and they brought us home Magnolia Bakery Cupcakes. They are MY FAVORITE cupcakes out of all the fancy cupcake places.

On sale at CVS, I haven’t tried the chocolate ones yet but they look delicious!

For some reason I was STARVING before teaching my Cycling class last week. So I decided to grab a delicious smoothie to do the trick: banana, almond milk, non-fat frozen yogurt, and peanut butter. It tasted like a milkshake!

My family and I went out to lunch after my Dad’s church thing at this Portuguese restaurant, HOLY large servings. I got the BBQ pork and did not eat all of that, don’t worry ๐Ÿ˜‰ We also shared Fried Calamari.

Finally I baked these delicious and not too hard Peppermint Mocha Cookies for our staff holiday party. Recipe from Sally’s Baking Addiction.ย
