Recent Eats: Christmas Break Edition

I enjoyed some very delicious food over my Christmas Break! Sometimes I over indulged a bit, but it’s all good, we don’t go overboard everyday all year long so some overeating of cookies for a few days won’t hurt.

We had left over Ricotta from our Christmas Eve dinner so I baked a Lemon Ricotta Bundt Cake. Very delicate and light. A nice refreshing after dinner dessert.

A few months ago I bought the Magnolia Bakery Cookbook. They are my favorite cupcakes ever so I made the Vanilla Cupcakes with the Chocolate Buttercream Frosting. OMG. SO. GOOD. The cake wasn’t as moist as the originals, I think I over-baked them but that frosting. Let’s just say you use 5 sticks of butter to make these cupcakes. Yup nice and artery clogging. Like I said, once in a while, no big deal! 🙂 I also used my new food scale that my Dad got me to accurately measure my flour and chocolate!

NYE Dinner: Steak, Potatoes Au Gratin and Grilled Fennel. Yes I use Ketchup on my steak, sorry I’m not sorry.

After my Body Pump Practice in the city I wanted to go out for a big and yummy salad. My family and I stumbled upon a new Greek restaurant and really enjoyed it! On the left they give you a sample of an Eggplant Spread, Bagel Chips and Olives. We shared the Lamb Grape Leaves as an app- so good!

I got a big salad with chicken, avocado, tomatoes and blue cheese. Hit the spot.

I made two batches of Granola. On the left: Cinnamon Chia Seed Granola and the right Peanut Butter Granola.

I used my new pasta attachments for my Kitchen Aid Mixer! OMG I don’t ever want to eat pasta from a box again!
