I believe we are all a work in progress. Each day, each month, each year we learn more and more. As we get older I do think we get a little wiser, we learn more about ourselves and others. From year to year I feel as though I have a better sense of my body, what I need, and what makes me happy. I also learn as I get older, what matters and what doesn’t.
Looking back a year ago I think my mindset was in a different place. I was super focused on running, mileage, working out and fueling my body because I ran X amount of miles or worked out for X amount of hours. At the time I thought this was ok, I was still indulging and eating what I wanted. But looking back and seeing where I am now, I am in an even better place with my body and my feelings.
I will forever struggle with body image, food issues, etc. because I have most of my life. But each year I learn a little bit more, grow a little bit wiser and feel even better than I did the last. With that being said, the purpose of sharing all my “recent eats” is to show off some great recipes I have tried. Some of it may be “labeled unhealthy” but I’m not at point where I say, I ran 13 miles therefore I get to indulge. Somedays I eat more foods “labeled healthy” and somedays I don’t and it has nothing do with working out.
Food is fuel and medicine. Some days you need oatmeal and kale because it gives you the energy to workout and the nutrients your body needs. Some days you need chocolate or ice cream because your mind needs a feel good factor.
So here is a look at the food that fuels me, gives me nutrients and makes me say mmmm.
Sliced Apple, Peanut Butter and Chocolate Chips.
Sausage, broccoli rabe, onion, mushrooms, quinoa and feta cheese.
Homemade pizza, whole wheat dough, tomatoes, mushrooms and chicken on one (my parent’s observe no meat on Friday’s during Lent). PS I bought the fresh tomato sauce from Trader Joe’s instead of the jarred. Game changer. Buy it.
Turkey Kielbasa, Potato Pierogies, Sauerkraut, and Broccoli.
What do you do when you get like 10 boxes of chocolates from your students? Bake!
Greek Yogurt, Grape Nuts, Almond Slivers and Banana post hot yoga.

Homemade raviolis from scratch and chocolate covered strawberries for dessert on Valentine’s Day.
