Happy Hump Day!! Today I am sharing a bunch of yummy meals I had over my winter break!!
There was a lot of afternoon healthier hot chocolate most days. I microwave some milk, maybe half a cup or less add in cocoa powder and agave then add hot water. A student gave me this hot chocolate swizzle sticks so I have been using those too.
No work= warm meals. Scrambled eggs and a bowl of cereal.
Lunch out with my friend at The Rolling Pin. Butternut Squash Soup and a salad with goat cheese and onions and a scoop of chicken salad and sweet potato salad. We got a yummy caramel and chocolate cake for dessert.
Overnight oats in an almond butter jar.
Pre-spin class snack. Rice cake with cottage cheese, raisins and walnuts. Carbs, Fat, and Protein all in one snack!
Another yummy breakfast: English muffin with PB&J, banana, and Greek yogurt with mashed up frozen strawberries that I nuked in the microwave for a few.
Home made whole wheat crust pizza with peppers, onions and chicken.
Quinoa stuffed peppers from Skinny Taste (we added ground turkey). SO good and flavorful.
Greek Salad from Redemption in NYC with Jen after we filmed my friend’s Body Pump audition! Always a blast catching up!
Peruvian Food Take out. On the left an empanada and salad on the right roasted chicken and rice and beans.
Very random lunch- aka trying to eat left over food- carrots, chicken with ketchup and an apple with almond butter.
“Celery Au Gratin” aka needed to use this celery before it turned!
Those are some yummy foods that I enjoyed on my week off!!
