I really love meal planning and prepping different meals with my family. I am going to miss it when I move out!! (Not yet though, still taking advantage of the situation and saving some $$).
Chicken cooked with lemon juice, olive oil and wine with a roasted eggplant and feta quinoa cold salad and some roasted veggies on the side.

This amazing cauliflower- recipe here with Greek style burgers, tzatziki and feta on pitas. Serving suggestions are to put the cauliflower in a pita with tzatziki and it can be served as a vegetarian meal, which I could totally see working. We had it as a side dish and put the tzatziki on top- SO good. *note we omitted the jalapeno because I am not a spicy girl. 🙂
