Since I had a 3 day weekend (hello personal day!) I decided it would be fun to recap it!
Morning cycling class.
Followed by overnight oats in an empty PB jar.
Then off to acupuncture. It was a really great experience and I look forward to continuing. I decided to go because I felt some tendinitis in my wrist and elbow and that morning my neck started to bother me. She saw the tendinitis in the wrist and elbow and said it is definitely on the mend but that she would work on it. In my upper back however, she said I have a longstanding issue that is making it’s way and needs a ton of work. She saw a lot of inflammation and trigger points that need help. She explained that constantly doing repetitive motions causes tendinitis and not resting enough in between strength training can do it too. So I am going to continue going and hopefully acupuncture along with proper strength training/rest I won’t have these minor injuries come up.
After that I enjoyed a yummy salad at home.
Eggs, lettuce, cucumber, carrots, tomato, sweet potato, cashews and Trader Joe’s Mango Vinaigrette.
Then it was off to the city to see some pianos for the Sing For Hope project that my good friend Lester works for.
This was the piano in Times Square.
Then I headed down to Herald Square to meet Lester and see a pop up performance from the child actors in the broadway show Fun Home.

They were so incredible, I need to see this Broadway show now!!
After they finished, Lester and I had a ton of fun singing as he played the piano. It was so fun and freeing to just sing in front of strangers in the very busy Herald Square!
If you live in NYC or nearby, try and check some out! They are only around for two weeks!!
After that I took a very long walk to the West 41st pier to take a dinner cruise with some friends!
You don’t have to pay for the cruise, just food and drinks and you can stay on for as many boat rides as you would like. The food is pricey but because of the gorgeous view/boat ride, it’s all worth it! Except for the salad, don’t order the salad. You will be left starving and eat people’s left over fries and shrimp to make up for it.
We still had a great time!

Went for a run and did some backyard strength training.
Followed by 3 ingredient pancakes. I’ve always seen these on blogs and decided to go for it! In a blender I blended half a cup of rolled oats, then I added a mushed banana and two eggs. The mixture is pretty runny, so make sure you cook them long enough until you see some bubbles form.
I served them up with sliced strawberries and melty peanut butter. They were so good and definitely a new breakfast staple!
After that I did some food shopping. Then I came home and meal prepped. After that I did a TON of errands. It was a weird day weather wise and although I was sad to not be at the pool, I got a lot of stuff done!
Then we had a yummy dinner & dessert. It felt like a Sunday!
Homemade pizza and a fancy arugula, apricot and fennel salad.
Picked this mango flavor up a Target, fun for summer!
With a strawberry tart for dessert. My Dad got a new Mandoline so he was slicing-happy!
After that I relaxed in bed and watched the movie The Intern on-demand. I saw it in the movies when it came out and was SO excited to see it for free on-demand. It’s SUCH a cute movie, definitely in my top 10!
My favorite instructor was out, so I decided to get to the gym earlier and practice my ride nice and early! Fueled with a new Larabar flavor I picked up at Target:
It was good but I think Chocolate Chip Cookie Dough my be my favorite.
Then I headed to the gym and practiced my ride which left me super sweaty! Followed by single arm planks, 3 sets of 30 second holds per side!
Came home and refueled with a cherry/Greek yogurt smoothie and an English muffin with PB& Banana. English muffins with PB & Banana has been my new go-to all the time, I can’t get enough of the combo!
Later on after some blogging work/training work I was ready for another pretty/yummy salad.
Lettuce, tomato, carrots, hard boiled eggs, cashews, and plantain chips with my favorite TJs Mango Vinaigrette!
Then it was time for lounging at the pool for a few hours!
Later on we came home and enjoyed some snacks while getting dinner ready.
Have you seen these Mango & Ginger crisps from TJs? So good!
Dinner was a really good chicken recipe from Cooking Light magazine, corn on the cob and roasted potato “fries” cut on the Mandoline.
After that round two of the fruit dessert made by Dad, except this time it was with pear!
That was my weekend! Phew! Super busy but filled with good workouts, good food, friends, family and sunshine! So much fun, now back to the grind for 10 more days!!
