Happy Hump Day everyone! I have off from work today! (Holla Jewish holidays!) Super busy day, but I of course have to share some of the delicious meals I have eaten recently!

Dinner out with my parents. Really delicious homemade hummus and pita to start and a roasted veggie salad with chicken for my meal.
Sunday Morning pancakes made with banana, two eggs, rolled oats (grinded up), cocoa powder and a splash of milk. Topped with agave and peanut butter.

I made Sweet Potato/Onion/Mozz/Spinach Egg Muffins. Pumpkin Muffins
For my salads for this week- Artichoke, Quinoa, Mozzarella Balls, Tomatoes, Chicken and Spinach. Love that I have been trying new recipes each week, keeps lunch interesting (even though I have to scarf it down in 10 minutes).
