In NJ, teachers get a four day weekend for the NJ Teacher’s Convention. You don’t have to go but it’s awesome to have a four day weekend.
I wanted to share some fun highlights from the four day weekend!
I wanted to get some school work done on Thursday so I didn’t have to think about it the rest of the weekend so I went to a coffee shop to get work done. A peanut butter banana iced coffee and a delicious chocolate cake pop.
On Friday I decided to rest my hip/abdomen so what did I do instead? Bake! I found two zucchinis in the fridge that never made it to a recipe so I decided to bake some zucchini bread muffins.
I made two batches: one with milk chocolate chips and one with walnuts and raisins.
They turned out delicious!
Later, I went out for lunch with my friend at my favorite lunch spot: The Rolling Pin.
An afternoon cup of cocoa. I heat up about a half a cup of milk in the microwave for a minute. Then I add a tablespoon of cocoa powder and about a teaspoon of agave. Then I add boiling water to fill to the top. I decided to add a dash of cinnamon and it was the best decision ever!
On Saturday I ran the Falling Leaves 10k with Jen in Queens! I haven’t ran that far in awhile! We made it- official time: 1:07:14! It wasn’t about a PR, it was about getting back out there and enjoying a race again!
They give out a sweet medal and a great long sleeved tech shirt. They also had some great post-run food, PB for the bagel choices, grapes and more! I really like NYC Runs races, I need to do more of them.
Later on I got a bunch of errands and meal prep done.
Feta, white beans, raw zucchini, tomatoes, celery and chicken.
I found this crisp bread at TJ’s, gonna try it this week to go with my salads.
After more errands I grabbed dinner with a friend and then came home, watched the first half of Wolf of Wall Street (so good, first time seeing it) and DVRed the rest before falling asleep early.

We enjoyed a VERY delicious steak dinner with “smashed” potatoes and an acorn squash purée.
It was a great 4 Day weekend! Lot’s of good food, baking and a great race!
