Recent Eats!

Happy Thanksgiving Eve! My class is cancelled tonight so I get to do some baking and prepping for the festivities tomorrow. I hope everyone has a joyous, delicious and Happy Thanksgiving!

Let’s check out some delicious meals I have been enjoying this past week!

A really delicious kale, chickpea, fennel, chicken sausage turmeric warm salad. So good!

There is more than lettuce under there I promise haha. A flatbread with roasted zucchini, hummus, goat cheese, topped with arugula, almonds and a lemon/olive oil dressing.

Greek Turkey burgers stuffed with feta and spinach topped with Tzatiki and a side salad.

Roman Chicken over rice.

Grilled cheese with Pesto Gouda cheese, Carrot Ginger Soup and side salad.

Buttermilk banana/walnut pancakes, bacon and coffee= Saturday morning treat.

Post 10k treats = snack later in the week.

Random lunch- PB&J English muffin and Greek yogurt with pumpkin, pumpkin spice and honey.

Another random lunch- spinach and pesto gouda egg scramble, flax seed chips and dried figs.

Mexican Take Out- sometimes you just don’t feel like cooking. 🙂img_5614

Rosemary Cheddar Biscuits and homemade chili. I used this quick loaf recipe but put the dough in a sprayed muffin tin, put the dough in 4 layers and and baked for 25 minutes. We were having a Thanksgiving celebration at work so I decided to make them for the occasion.
