Peanut Butter Chocolate Chip Banana Bread

you may want to make this Peanut Butter Chocolate Chip Banana Bread.

I suggest mixing the dry ingredients separate from the wet ingredients and adding the dry to the wet.

There is not an overwhelming amount of peanut butter in this recipe, however it gives delicious background tastes of peanut butter along with the banana and chocolate flavors.

Be sure to test the bread for a clean toothpick before taking it out of the oven.

Serve it while snuggled up on the couch with a blanket as the snow continues to fall. 🙂

Peanut Butter Chocolate Chip Banana Bread

Recipe by Andrea Golden

Prep time: 20 minutes

Cook time: 1 hour

Total time: 1 hour and 20 minutes

Yield: 8-10 servings

Ingredients

  • 2 cups All Purpose Flour
  • 1 tsp Baking Soda
  • 3/4 cup Sugar
  • 1/2 tsp Salt
  • 3 Ripe Bananas
  • 1/2 cup 0% Greek Yogurt
  • Egg
  • 1/4 cup 2% Milk
  • 1/4 cup Creamy Peanut Butter
  • 1 cup Semi-Sweet Chocolate Chips

Cooking Directions

  1. Preheat oven to 350 F
  2. Prepare a 9 x 5 loaf pan with cooking spray
  3. Whisk together the dry ingredients in a medium bowl
  4. In a bowl of a stand mixer add bananas and mash with masher or fork
  5. Add wet ingredients including peanut butter and stir in stand mixer until combined
  6. Add dry ingredients to wet ingredients and stir until combined
  7. Stir in chocolate chips
  8. Transfer to prepared loaf pan
  9. Bake for one hour or until golden brown top forms and a toothpick inserted in comes out clean

I’m back!!

Hello everyone!! I am so sorry for taking a break without warning. I have alluded to the fact that these past few months have been super tough for me, anxiety, stress, etc. and one day I decided I just needed a blogging/social media break. I took a few days away from Instagram, blog reading, blog writing and then the blog writing never came back. With the holidays and whatnot the break was definitely needed.

I also think taking time away from reading blogs looking at Instagram posts can be refreshing especially when you aren’t the happiest with your own life. Sometimes looking at the 2% of someones day that looks like rainbows and butterflies and sunshine can make you fall into that comparison trap and cause more anxiety and sadness. After my mini break I unfollowed a ton of triggering Instagram people and stopped reading a couple of so called “healthy living bloggers.” I still read a few tried and true that really send positive messages.

While thinking about blogs/social media users that send out false messages and may trigger thoughts of self-doubt, comparison, unhealthy eating and exercise habits, it has made me self-reflect on this space. I never want someone to read my blog and think I should eat that way or I should workout that way because that is never and will never be my intent. So with my new new updated look (the old one felt too dark for me) I want to update my content. I always have these amazing blog post ideas while running and they never come to fruition because it’s just easier to type up my workouts and show pics of food with barely any content or thought behind it. My goal with my updated content is to share recipes that I want to begin developing. Share some cool workouts that I develop (not that you have to follow). Share some of my struggles, thoughts and opinions about this life we are all living. All along while sharing important moments in my life that I want to capture and share. With these new content goals in mind and this updated look, I also don’t want you to expect constant posts each week. It may be once a week, once every two weeks because I want my content to be more meaningful and to do that I need some time.

I’m back with some more pictures of food. I’m not going to lie and say after Thanksgiving my eating/thoughts were just off. I was wayyyy to stuffed after dessert on Thanksgiving and that thought kind lingered with me all weekend. But I still tried to listen to what my body wanted/needed and ate that way. Intuitive eating is really hard, but I am trying. 🙂

I saw these protein bars at TJs and decided to try one. I am not big into fake protein bars but the fact that the protein comes from real food is pretty awesome. I didn’t love this flavor though, but I did buy a chocolate coconut one, I will let you know the verdict on that one!

Weekly Workouts

Happy Monday everyone! Back to the daily grind, womp, womp… Less than a month until Christmas break- I can do it, I can do it! 🙂 Let’s see last week’s workouts…

Monday

Total Body Strength superset style of opposing muscle groups. For example- back and chest, 3 sets of 10-12 then on to the next set of muscle groups.

Tuesday

3 mile quick run- it’s getting dark so early, I have to wear my fluorescent vest now!

Wednesday

Total Body Strength superset style again before heading home to bake!! My class was cancelled for the night.

Thanksgiving Weekend Recap

Hope everyone had a great Thanksgiving weekend! While I didn’t feel “totally into it” as I mentioned last week it still was a great weekend filled with food, workouts, family/friend time, and catching up on some organization.

On Wednesday evening I did ALL the baking…

Salted Caramel Apple, Pumpkin and Chocolate Pecan Pie

On Thursday morning I ran a Turkey Trot with my friend. I was so tired from staying up late from baking but I got my act together and did it!

Great course and great company!

After lounging, watching the parade and dog show, I made the dips, then got ready for our company to come.

I made an avocado feta dip and a pumpkin bean dip as well as a cheese plate.

We all enjoyed the dips for a few hours then I helped my Dad with all the final touches of dinner.

Then it was time to EAT!

Then with full bellies we watched Elf as part of our tradition every year! In the middle of the movie I snuck off to get dessert ready.

I made homemade whipped cream for the pies. SO good and so easy with the Kitchen Aid Mixer.

Then we dug into the pies. I had to sample each of them of course. This plate put the full belly over the edge.

The next day was Christmas decorating day for us.

The rest of the weekend was getting together with friends, taking a sweaty spin class, food shopping, a run, relaxing and crossing some things off the to-do list. It was a great weekend filled with all of my favorite things. Although I may not have felt so “in it” I still enjoyed it! 🙂

Recent Eats!

Happy Thanksgiving Eve! My class is cancelled tonight so I get to do some baking and prepping for the festivities tomorrow. I hope everyone has a joyous, delicious and Happy Thanksgiving!

A really delicious kale, chickpea, fennel, chicken sausage turmeric warm salad. So good!

Rosemary Cheddar Biscuits and homemade chili. I used this quick loaf recipe but put the dough in a sprayed muffin tin, put the dough in 4 layers and and baked for 25 minutes. We were having a Thanksgiving celebration at work so I decided to make them for the occasion.

Weekly Workouts!

Happy Monday everyone! I cannot believe that Thanksgiving is this week. I am not mentally ready for it at all. To be totally honest I have been going through a lot in my head these past few months, anxiety, old disordered eating thoughts, etc. that I just am not in the best place right now. But I am working on it, going to therapy and just trying to keep on trucking. Some days it takes a lot to get to the gym and some days I am good to go. This past week was tough, but I know that getting some sweat out (not over doing it) does make me feel better and I am thankful that is an outlet that I have. I am still looking forward to the holiday with my family, baking, running a Turkey Trot, and all the delicious food. However, I don’t feel totally “in it,” and that’s okay, because sometimes we aren’t okay.

Anyway, thanks for reading and listening. I love that I have this space to share my thinking, fun and food. 🙂

SO let’s recap this past week of workouts like I normally do!

Monday

I did a total body workout. It has been fun to switch things up these past few weeks. We will see where things go with it but right now I am just trying to have some fun and pump some iron at the gym. 😉

Tuesday

I took the week off of running due to the pain in my lower abdomen. (All tests came back fine, so probably a muscular issue due to my torn labrum. Thank goodness for acupuncture, they are just sticking needles there and it is feeling better!) So I decided to do my own spin playlist at the gym. This was tough to motivate myself. I really like having an instructor and others in the room to push me. But this was what worked for my schedule and was a good replacement for a run.

Wednesday

I did a really great total body workout that left my hamstrings and back soreeee. I have been trying to use the TRX sometimes and I did a hamstring exercise and a back exercise- holy soreness. I want to look into getting certified/buying an at home one for the business. It’s an awesome piece of equipment.

Then I taught my cycling class! Another bigger group, about 12 people. Anything over 10 is a big group for this gym. I love that I have some regulars too! It has almost been a year since I have been teaching this class!

Thursday

Rest Day- I trained my client. She is working so hard and dreads to see me every time but she is doing great! 🙂

Friday

I had on my Body Pump shirt and had a really bad day and couldn’t bring myself to design my own workout so I put on the headphones and cringed/got excited that I still remembered most of the release that I was trained on. Those songs still haunt my memories haha. But I sweat and did 80 billion reps, so I guess it was a good time haha!

I took my favorite Saturday cycling class. So sweaty and awesome!

Sunday

After a week off of running I went back out there for 4 miles. I listened to a podcast which made time fly by. It felt good to get back out there but my hip was definitely sore and stiff after.

OH and I signed up for half #2!! Let’s pray I can do this! Jen and I are running the Binghamton Half on May 7th! I am so excited to do a race with her, our runs literally fly by together! ❤

Chicken & Veggie Wrap ordered at work for parent teacher conferences night.

Really delicious baked chicken recipe from PB fingers served with rice and broccoli. We marinated it overnight and it made the chicken so moist and delicious.

Taco Soup– recipe from Immaeatthat. We forgot to add the zucchini but it was still so freaking delicious and EASY.

I forgot that I used to buy the chocolate covered frozen bananas from Trader Joe’s, so I spied them last weekend and bought them. Add some peanut butter and voila- delicious snack!

Weekly Workouts

Happy Monday everyone! This past week was not very eventful in terms of workouts. There was more rest than normal due to some strange pain in my lower abdomen. I went to the doctor and they are doing some tests to see if it is more muscular due to my labrum tear or more internal. We will see, no fun to have weird & random pain.

Let’s recap this week’s of workouts:

Monday

Rest Day- we had evening parent teacher conferences and after a full week of workouts a rest day was welcomed.

Tuesday

4 mile run

Wednesday

Rest before I taught my cycling class. Normally I lift weights but my lower abdomen pain was not feeling good so I decided I needed to rest before teaching.

Thursday

Early AM at home workout before training a client on my day off. My abdomen was feeling OK so I decided to keep the workout at home just in case I needed to stop. I used dumb bells and my Kettlebell for a sweaty total body workout.

Friday

After my doctor’s appt the afternoon before she suggested I rest, so rest I did.

Saturday

Falling Leaves 10k with Jen in Queens! My hip/abdomen was OK for it, felt somewhat tight by the end but I was able to run the distance. I think I’m gonna take a running break this week just to help it rest a bit more. Even though running doesn’t hurt it, I am sure I make compensations while running, so that could be an explanation of the pain.

Sunday

I went to one of my favorite instructor’s spin classes! It’s very hard to get into her class and someone decided to take a different class so she gave me her pass and I got in. Oh man it was SO hard and so good!

That is a wrap-up of my workouts this past week. Let’s hope my hip is on the mend and I can get back to my regularly scheduled programming. 🙂

Long Weekend + 10k Race Recap!

In NJ, teachers get a four day weekend for the NJ Teacher’s Convention. You don’t have to go but it’s awesome to have a four day weekend.

I wanted to share some fun highlights from the four day weekend!

I wanted to get some school work done on Thursday so I didn’t have to think about it the rest of the weekend so I went to a coffee shop to get work done. A peanut butter banana iced coffee and a delicious chocolate cake pop.

On Friday I decided to rest my hip/abdomen so what did I do instead? Bake! I found two zucchinis in the fridge that never made it to a recipe so I decided to bake some zucchini bread muffins.

I made two batches: one with milk chocolate chips and one with walnuts and raisins.

They turned out delicious!

Later, I went out for lunch with my friend at my favorite lunch spot: The Rolling Pin.

An afternoon cup of cocoa. I heat up about a half a cup of milk in the microwave for a minute. Then I add a tablespoon of cocoa powder and about a teaspoon of agave. Then I add boiling water to fill to the top. I decided to add a dash of cinnamon and it was the best decision ever!

On Saturday I ran the Falling Leaves 10k with Jen in Queens! I haven’t ran that far in awhile! We made it- official time: 1:07:14! It wasn’t about a PR, it was about getting back out there and enjoying a race again!

They give out a sweet medal and a great long sleeved tech shirt. They also had some great post-run food, PB for the bagel choices, grapes and more! I really like NYC Runs races, I need to do more of them.

Later on I got a bunch of errands and meal prep done.

I found this crisp bread at TJ’s, gonna try it this week to go with my salads.

After more errands I grabbed dinner with a friend and then came home, watched the first half of Wolf of Wall Street (so good, first time seeing it) and DVRed the rest before falling asleep early.

On Sunday I baked a German Chocolate Cake for my sister’s bf’s birthday:
